Pleasure for only motto

Is it healthy to drink red wine or white wine? If yes, should we drink red or white wine? And in which quantities?  What does this drink bring to our organism? Is wine good for our psychological health? Is it essential to enjoy a good meal?

At a time when the law regarding the road traffic restrains blood alcohol rate in Switzerland and almost all over the world, an interventional cardiologist from the CHUV, Didier Locca, an internal-nutritionist doctor, Adrian Heini, a dietician, Laurence Grosjean and a behavioural-physiologist, Chris Christiansson, wanted to evaluate what we should think of this drink that is part of our Swiss culture.

They have met each other in the wine cellar of Raymond Paccot in Féchy (Vaud), a winegrower, fond of biodynamic viticulture.  The world famous chef, Philippe Rochat (Hôtel de Ville, Crissier, Vaud), and his sommelier, Christophe Montaud, brought as well  their point of view of gastronomes daily listening to their clients. Lesson for a good and healthy degustation.

Eat with pleasure

Why ?

Because eating is not only a matter of satisfying a starving body, it is also a means of socializing and providing hospitality. If one wants to feel good after a meal, it has to be light and eaten in a favorable atmosphere without any strong tension or noise. "The human being needs pleasure, and eating is one of the pleasures of life!"

How ?

To eat with pleasure, you have to be convinced that what you are eating is good for you and that it tastes good. The dining room should be as welcoming as possible and the food should be presented very attractively. Meal times should be relaxed and an occasion for conversation and friendship.
